What is a buron?

A buron is a typical building of the Aubrac region, historically used as a summer cheese dairy and sometimes as seasonal housing for shepherds. These stone buildings were used to produce Aubrac cheese, such as the famous Cantal or Tomme, while the herds grazed at higher altitudes during the summer. Burons are often isolated in the pastures, offering breathtaking views of the mountain landscapes, and today symbolize the rural and cultural heritage of the region.
